Slow-Roasted Leg of Lamb with Izak Reserve

Jason's Hill Izak Reserve is the perfect companion for a succulent, slow-roasted leg of lamb and crispy potatoes. The delicate flavors of the tender lamb, slowly cooked to perfection, complement the rich notes of dark fruits, cassis, and spice found in this exquisite wine. Served with a fresh salad and golden potatoes, this dish is sure to impress and leave everyone at the table asking for seconds.

Ingredients:

  • 1 leg of lamb
  • 4–5 whole garlic cloves, plus 2 crushed garlic cloves
  • Olive oil
  • Oregano
  • Salt
  • Pepper
  • 1 lemon
  • 1.5 kg potatoes
  • ½ cup water


Method:

  • Preparation: Remove the lamb from the fridge 1 hour before cooking to allow it to reach room temperature.
  • Preheat the Oven: Set your oven to 200°C (392°F).
  • Prepare the Lamb: Place the leg of lamb in a roasting dish. Using a sharp knife, make small incisions all over the lamb and insert the whole garlic cloves into the holes.
  • Season the Lamb: Generously rub the lamb with olive oil, salt, ground pepper, and oregano. Squeeze the lemon over the lamb, rubbing the juice in with your hands to ensure it's well-coated.
  • Prepare the Potatoes: Peel the potatoes and cut them into quarters. Place the wedges into a deep mixing bowl, seasoning them with olive oil, salt, pepper, and the crushed garlic. Mix well with your hands, ensuring the seasoning is evenly distributed.
  • Arrange in the Dish: Scatter the seasoned potato wedges around the leg of lamb in the roasting dish. Pour ½ cup of water around the potatoes to keep them moist during cooking.
  • Roasting: Cover the dish with tin foil and place it in the preheated oven. Roast for 2 hours.
  • Brown the Lamb: After 2 hours, remove the tin foil and continue roasting the lamb for another hour, or until it is well-browned and tender.
  • Serving: Once done, remove the lamb from the oven. Spoon the juices from the dish over the lamb to add extra flavor. Transfer the lamb and potatoes to a serving platter.
